Lime Bizon Liqueur


Ingredients:
16 limes (unwaxed, organic)
3 cups of white sugar
1 litre of vodka 'Żubrówka' (Polish Bison Grass Vodka)


Preparation:
  • Wash the limes to remove any dirt. Peel the fruit with a potato peeler, making sure that no or limited amount of white pith stays o the skin.
  • Put the lime peelings into clean glass jar. Pour 0.5 litre of Żubrówka over the lime peelings. Set aside.
  • Juice all the limes. Strain the juice to make sure no pip or pith is present.
  • Add sugar to the lime juice and boil until the syrup slightly thickens (around 15 minutes).
  • Leave the syrup to cool completely.
  • When syrup cools down transfer it to a second clean glass jar, and add the remaining 0.5 litre of Żubrówka.
  • Both jars need to be stored in a dark, cool place for at least one month.
  • After a month the strain the peelings and combine both liquids. Leave to macerate for another month. After that time strain the liquid through cotton wool to remove sediment and bottle. 
  • The liqueur has to mature for at least 12 months on a cool dark place
